Just looking at the photo, I would have guessed that you had too much blue light... but that does not seem to be the case. Are you in a very dry climate?

Oh, and for strip distance, the way I calculate it is, that the diodes have a 120 degree lens, so if your strips are 4cm from each other their beams intersect about 1cm below the lamp. If your diodes are 12cm apart, their beams intersect at around 3.5cm. Even at 16cm their beams intersect around 5cm...

I would imagine your main question would be if you make one large lamp, or multiple smaller ones?
You would probably do well by making 3 lights from the two foot strips, covering 50x56cm so if you run multiple strains you can set lamp height independently.
