New to LEDs I have a pair of HLG 185 1400 B drivers and I wanted to pair them to some CXM32s 3500k to replace some old CXB 3590s. How many CXMs would I be able to fit on the driver?

Offhand, depending on your generation of COB, (you should Google the manufacturer's number of the COB so you can get the correct data sheet), and at that amperage, (1.4), you will be running those COBs at their Minimum Voltages' which is around 48-50 volts each. The driver has 179 volts to play with so 3 COBs per driver safely I would think.
And you can always email Luminus and ask them too. Make 'em earn your money !

That driver has max voltage of 143V, not 179. Should fit 2 X 50V cobs
