The HLG-600H-48B specs says it'll do 48v @ up to 12.5amps. I'm hoping to keep to 18awg wire, and plan on running the driver at half power, 300 watts.

Would this wire be ideal? I'd be running it in a bundle of 20 wires in a conduit, and am concerned about the heat build up/lack of secondary jacket.

It's also rated for 6 ampacity - would that be same as amps? I find it strange if so that 18awg could only handle 6. Why is finding suitable wire so difficult

That wire looks far too thin. You should be using the same gauge as what the driver comes with, im pretty sure its stranded 17AWG with an outer sheath on hlg600s
Not sure why you want to drive at half power either. You may as well buy HLG 320 drivers if you only want 300W
