Easy to connect to what? IP addressable cameras are everywhere, just be sure to put black tape over the infrared led if it has night vision or at least account for it.
When I grew outdoor in greenhouses, the cheap and easy solution (for fun) was an old burner phone I found in the cabin, wrapped in a plastic bag with a solar charging battery pack. I forgot and left it over the winter but had no problems getting the pics off the micro SD card next spring...
